I was in dire need of a mini get away and didn’t even know it til I hit the road. One massive Moroccan mint tea and two hours later, I turned onto a street lined with bungalows and royal palms, and I was there. Vacation.
A smile the size of the sun was immediate as I was greeted by a golden curled baby boy who couldn’t wait to show me around. We took the tour and headed out for our first adventure: Peruvian cuisine.
I’m not sure this ceviche could have been any fresher or tasted any better. It was nothing short of amazing. Just writing about it makes me irrationally consider that a two hour drive isn’t that far to travel for lunch (and the new man in my life).
Bedtime for Bonzo meant time for girlie chatting and fancy feasting. Toasted sourdough topped with sauteed oyster mushrooms, baby bellas, and onions was a guaranteed win.
And for dessert? My second attempt with avocado chocolate mousse! I made a conscious effort to remember the ingredients this time, I was confident it would be worth posting.
1 large Florida avocado
4 tablespoons dark cocoa powder
3 tablespoons agave nectar
1 teaspoon pure vanilla extract
Add a spoonful of peanut butter if sweetness mixed with avocado makes you uneasy.
We used the leftover sourdough for French toast in the AM and set out for another adventure.
