As is case with most recipes, this Mango Quinoa recipe came about because we needed a meal for Ez and we were about out of groceries. Luckily we always have organic quinoa on hand and, lately, we’ve been keeping organic frozen mango on hand as well. This recipe was intended for breakfast. But if you’re baby leans more toward fruit than veggies, I don’t see any reason why this dish couldn’t be served for any meal.

- In a small saucepan over high heat, bring quinoa, water, and frozen mango to a boil.
- Reduce heat to low, cover, and cook for 15 minutes.
- Remove from heat, add coconut oil and stir until melted .
- Add cinnamon to taste and either serve when cooled or add to containers to store in the refrigerator or freezer.
