Slow Cooker Cranberry Rhubarb Sauce

Homemade cranberry sauce is one of the easiest recipes you can make this holiday season.  All you need is a slow cooker, about four hours notice, and a few simple {and fresh!} ingredients.

I was looking for a way to liven this fall favorite and adding rhubarb and Chinese five spice did just that. Although still very tart, rhubarb is a little less tart than cranberry allowing for a recipe that calls for less sugar.  And Chinese five spice {cinnamon, cloves, star anise, fennel, and pepper} pulls all of the flavors together, like a bow on a present.

Ingredients

  • 6 ounces fresh cranberries
  • 2 stalks rhubarb sliced vertically and then chopped
  • 1/2 cup freshly squeezed orange juice
  • 1/2 cup water
  • 1/4 cup brown sugar
  • 1/4 teaspoon Chinese five spice
  • pinch salt

Instructions

  1. Place all ingredients except for the Chinese five spice in a slow cooker.
  2. Stir and cook on the high setting for 3 hours, until cranberries have burst and can be easily mashed.
  3. Mash cranberries until desired consistency.
  4. Mix in Chinese five spice and salt and cook on high for another hour.
  5. Place in an air tight container and chill until ready to serve.
