Seared Pork Tenderloin

I’m so excited to announce the winner of this BergHOFF enameled cast iron pan!  I’ve been loving this pan so much over the past few days – perfect eggs, delish desserts, and now this seared pork tenderloin.  Sharing a kitchen staple I love so much with a FoodFash fan totally makes my week!  But first, I’m going to share how easy it is to sear a pork tenderloin when you’re using the correct equipage.

Ingredients

  • 12 ounces pork tenderloin trimmed of fat
  • 4 tablespoons vegetable oil
  • salt & freshly cracked black pepper to taste

Instructions

  1. Preheat oven to 400 degrees.
  2. Heat oil in enameled cast iron pan over high heat.
  3. To test if the oil is hot enough to sear, gently set a piece of pork fat in the pan and, if it sizzles, it's ready.
  4. Gently set pork in hot oil and sear, uninterrupted, for 4 minutes on each side.
  5. Place entire pan in pre-heated oven and cook until internal temperature is 150 degrees, about 15 minutes.
  6. Remove pork from pan and let rest for 5 minutes before serving.
